Many people wonder if "flash-freezing" fish affects the quality and taste of fish. The answer is YES depending on the type of fish which is why we are careful to only purchase flash-frozen goods when increased health benefits and no sacrifice of flavor or texture are attainable.

Tuna and white fish: The Super Freezing Process

It is a known fact that flash-freezing tuna and white fish can be detrimental to their taste. Although buying Flash-Frozen Tuna is less expensive, we buy Grade One Tuna that is "Super Frozen" (-60C) immediately after being caught. This ensures the color, taste and texture remain intact, just as though it was caught that very day.

Salmon: Flash-freeze it

With Salmon, flash freezing ensures that all bacteria gets killed, and unlike tuna or white fish, when frozen right after being caught salmon does not lose its flavor after being thawed. Be careful of anyone claiming to serve you “fresh” salmon.

Our Tuna is thawed using warm salt water so its full flavor is never 
compromised.
